Vegan Coconut Pana Cotta Recipe
This past year I have cut almost all dairy out of my diet. I am not lactose intolerant, but I noticed that I would get itching and discomfort is my throat after eating dairy. Not to mention that dairy is a pro-inflammatory food, so by reducing it where we can there are only positive benefits. Although because I still like making my occasional desserts I wanted to re-create some of my favorites without dairy. Even though its 100% dairy free, it is 100% delicious. It is also super simple to make. Ingredients: Makes 4 servings
2 cans of full fat coconut milk
5 tbsp maple syrup
2 tsp agar agar powder (or any vegan gelatin)
Blueberries to decorate
Mix agar agar, maple syrup and coconut milk in a small pot and bring to a boil then turn it down to a simmer. Cook for about 2-3 minutes whisking it constantly.
Pour the mixture into small glass cups after the mixture is cooled down for about 5 minutes. Make sure to continue to stir the mixture as it is cooling down and off the stove.
Chill in the fridge for 3-4 hours. Decorate with blueberries or fruit of your choice. Enjoy!
